Breakfast Recipes

Baked Omelet

(Serves Eight)
8 eggs
2 c cottage cheese
8 oz grated cheese
8 oz diced ham

Directions:

1) Preheat oven to 350°
2) Spray 9×13″ pan with oil
3) Puree eggs and cottage cheese in blender
4) Spread diced ham on bottom of pan
5) Sprinkle grated cheese on top
6) Bake 40 minutes at 350°, until knife comes out clean
7) Cut into 8 servings, serve warm or make ahead, refrigerate and reheat single servings

Variations:
Ham and Swiss with green onion
Broccoli and cheddar
Turkey, bacon and cheddar

 

Baked Cauliflower

Break/cut cauliflower florets into pieces and place on a baking sheet (I put foil on mine and sprayed with cooking spray). Drizzle olive oil lightly over the cauliflower, sprinkle with sea salt. Bake at 350 for 30 minutes. The cauliflower will brown slightly and get a little crispy on the outside edges.
 

Turkey and Apples

Serves 4
1 egg whites
1/2 granny smith apple, diced
1 scallion White part with 1 inch of green, sliced
Pinch of sage, paprika and nutmeg (dry)
12 ounces ground turkey breast
Cooking spray

Beat eggs and stir in spices. Place ground turkey in separate bowl making a well in the middle. Pour the egg whites into the meat, add eggs and mix until combined. Cook on medium heat until brown. Enjoy.
